Ingredients For Sweet Potato Soup

  • 2 tbs. unsalted butter
  • 1 cup chopped onion
  • 2 garlic cloves, minced
  • 5 1/2 cups chicken broth
  • 3 large sweet potatoes, peeled and chopped
  • 1 cup apple cider
  • 1 tsp. canned chipotle pepper in adobo sauce
  • 1 tsp. salt
  • 2 tbs. Plus 2 tsp. fresh lime juice
  • 1/2 cup sour cream

Step By Step Directions: Sweet Potato Soup

1 In a large saucepan over medium heat, add the butter. When the butter melts, add the onion and garlic. Saute for 5 minutes or until the onions are tender. Add the chicken broth, sweet potatoes, apple cider, chipotle pepper, and salt. Stir until combined and bring the soup to a boil. Reduce the heat to low and simmer for 20 minutes or until the sweet potatoes are tender. Remove the pan from the heat.

2 Unless you have a large blender, you will need to puree the soup in batches. Add the soup to a blender. Puree until smooth. Add the soup back to the pan. Place the pan back on the stove over low heat—Cook for 5 minutes. Remove the pan from the heat and stir in 2 tablespoons lime juice.

3 In a small bowl, add the sour cream and 2 teaspoons of lime juice. Stir until combined. Spoon the soup into bowls and drizzle the sour cream over the top. Serve hot.
