  • Six large russet potatoes washed
  • 1/2 cup melted unsalted butter
  • Two tbs. taco seasoning mix
  • 1 cup shredded cheddar cheese
  • 15 bacon slices, cooked and crumbled

1 Preheat the oven to 375°. Pierce the potatoes with a fork. Bake for 1 hour or until the potatoes are tender. Remove the potatoes from the oven and cool for 15 minutes. Reduce the oven temperature to 350°. Cut the potatoes, lengthwise, into quarters. Remove the potato from the skins leaving about 1/4″ potato on the skins. Use the removed potato for another recipe.
